Prepare this delicious version of vegetarian sopes made with potatoes with bits of cauliflower Eva®, served with refried beans, and a pico de gallo with panela cheese, accompanied by salsa. They are the perfect snack!

Preparation
For the dough, hydrate the potato flakes with the water until you get a dough. Mix with the Eva® cauliflower bits, egg, salt and pepper.
With the help of two wooden boards, form the medium thick sopes and cook in a pan over medium heat with a little oil. Pinch the edges while still warm, to shape it. Set aside.
For the pico de gallo, in a bowl mix the tomato with the panela cheese, the avocado, the olive oil, the oregano, season with salt and pepper.
Spread each sope with a little refried beans, add the pico de gallo and decorate with coriander leaves. Accompany with sauce.
