Prepare this delicious version of vegetarian sopes made with potatoes with bits of cauliflower Eva®, served with refried beans, and a pico de gallo with panela cheese, accompanied by salsa. They are the perfect snack!

Ingredients

4 portions
  • 2 cups potato, in flakes
  • enough Water
  • 1 cup Cauliflower Eva® Bits
  • 1 egg
  • to taste salt and pepper
  • 1 tablespoon oil
  • 3 tomatoes, cut into medium cubes
  • 1 cup panela cheese, cut into medium cubes
  • 1 1/2 avocados, cut into medium cubes
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • to taste salt
  • 1 cup refried beans
  • to taste fresh coriander, to garnish
  • to taste green sauce, or red to serve

Preparation

For the dough, hydrate the potato flakes with the water until you get a dough. Mix with the Eva® cauliflower bits, egg, salt and pepper.
With the help of two wooden boards, form the medium thick sopes and cook in a pan over medium heat with a little oil. Pinch the edges while still warm, to shape it. Set aside.
For the pico de gallo, in a bowl mix the tomato with the panela cheese, the avocado, the olive oil, the oregano, season with salt and pepper.
Spread each sope with a little refried beans, add the pico de gallo and decorate with coriander leaves. Accompany with sauce.

PRESENTATION

Decorate your sopes with cilantro and accompany with green or red sauce.

TIPS

The bits of cauliflower Eva® contain water, these will also help you hydrate your potato flakes.
