Veggie Cakes with Guacamole

Cook this recipe for Veggie Cakes with Guacamole, prepared with baked vegetables, and made with quinoa, corn, zucchini and queso fresco. Rise quinoa well before cooking it.

Ingredients

4 servings
  • 1 Cup of quinoa cooked
  • 1/4 of Cup of onion finely chopped
  • 1 teaspoonful of garlic finely chopped
  • 3/4 of Cup of pumpkin grated
  • 1/2 Cup of corn kernels
  • 1/2 Cup of fresh cheese crumbled
  • 1/2 Cup of ground bread
  • 1 piece of egg
  • 1 tablespoon of parsley finely chopped
  • 1 teaspoonful of Salt
  • 1/2 teaspoonful of black pepper
  • 1 piece of Avocado from Mexico for the guacamole
  • 1 tablespoon of lemon juice for the guacamole
  • 1/2 Cup of cherry tomato quartered
  • 1/4 of Cup of red onion finely chopped
  • 1 piece of serrano pepper cut into thin slices
  • 1 tablespoon of coriander finely chopped
  • 1 teaspoonful of Salt
  • 1/2 teaspoonful of black pepper ground

    Preparation

    Preheat oven to 350º F.
    In a bowl, mix quinoa with onion, garlic, zucchini, corn kernels, queso fresco, breadcrumbs, egg, parsley, salt and pepper.
    Using your hands, shape the cakes from the mixture above, and place them in a baking sheet lined with baking parchment or waxed paper.
    Bake about 20 minutes or until browned. Set aside.
    For the guacamole, in a bowl, using a fork, crush avocado with lime juice to make a rough puree. Add tomato, red onion, serrano pepper and cilantro. Season with salt and pepper.
    Serve the cakes with guacamole and enjoy.

    PRESENTATION

    Serve cakes with avocado and enjoy.

    TIPS

    Rinse quinoa well before cooking. You can use white, red or black quinoa.
