Preparation
Heat a large skillet and spray with vegetable spray.
Brown the garlic for 1 minute and add the spinach, cook until well cooked and remove from heat.
In a deep bowl, lightly beat the egg whites and season with salt and pepper.
Put the whites in the hot skillet and cook for 1 minute.
Put the spinach in the middle of the egg and fold the egg over them. Flip the egg to brown the other side for 1 more minute.
