Ingredients

6 portions
  • 6 dry ancho chile peppers
  • 1/2 cream
  • 1 can refried black beans
  • 1/4 kilos Chihuahua cheese
  • salt

Preparation

Put the peppers in enough salted water to heat for 5 minutes, only to be re-hydrated and soft.
Remove them and make a small opening to put the beans and the piece of cheese. Close them gently, since you do not need a toothpick, arrange them in an anti-adherent pan, put the cream on them to bathe them, season and boil for 5 min.
Pass the chiles to a platter and take them to the table.

PRESENTATION

Present them decorating with a sprig of prejil or cilantro, you can serve them accompanied by white rice.

TIPS

You should not anneal the chilies in salted water, as they break down and break easily.
