Ingredients

6 portions
  • 3 zucchini, long rolled lengthwise very thin.
  • 50 milliliters extra virgin olive oil
  • 1/4 onions, finely chopped
  • 60 grams sunflower seed, chopped and a few whole ones to decorate.
  • 6 branches parsley, chopped
  • 2 cups curd cheese
  • 2 carrots, cut into medium sticks
  • 600 grams oyster mushroom, apricots without base
  • 1 bunch spinach, washed and disinfected
  • soy sauce, to taste
  • 2 liters Water
  • salt, and pepper to taste

Preparation

Bring a pot with the water to boil, once boiling add a little salt, and submerge the sliced pumpkins until the water boils again, remove them with a slotted spoon and cool them in the bowl with water and ice. Reserve.
In a frying pan add a little olive oil, add the onion, cook for a minute with a little salt, add the cottage cheese, the parsley and the chopped sunflower seeds, mix perfectly well and correct the seasoning. Reserve.
Spread the zucchini slices, placing the already cooked cottage cheese mixture on them, roll one by one and go through with wooden skewers putting four on each skewer.
Roast the mushrooms with a little oil in the pan on both sides, seasoning with salt and pepper. Do the same with the carrots.
Serve the skewer with the carrots, mushrooms and raw spinach and add some seeds to decorate, garnishing with the soy sauce.

TIPS

Instead of sunflower seeds you can put nuts and the skewers instead of cottage cheese can be put ricotta cheese.

Saludos, intenta sustituir los ingredientes por algunos que si encuentres, por ejemplo el requesón puedes cambiarlo por algún queso fresco o incluso queso Oaxaca. Y las setas por cualquier champiñón. Espero nuestros tips te sean de ayuda y te animes a subir una foto cuando las cocines.

Ingredientes Se me antojo su receta lo único malo es que aquí en Veracruz no hay esos ingredientes,pero quiero que sepan que me gustaria hacer brochetas,a ver que dia hago y les paso la receta,se nota a leguas que usted es una gran chef.
