Preparation
Grate the zucchini and squeeze the moisture with your hand.
Place in a container. Chop and fry the echallots and onions in hot oil until they are transparent.
Add the green chile and remove from heat. Add the echallots, onion and chili to the bowl with zucchini. Mix and add bread crumbs, beaten egg, cheddar cheese, cilantro, salt and pepper.
Mix well with a fork. Form burgers with your hands, crushing lightly.
Fry the burgers in olive oil in a nonstick skillet over medium heat, turning them a couple of times until they are lightly browned and crispy on the outside.
