Preparation

Preheated 180 ° oven. Beat the butter with the sugar and when they are well mixed add the yolk.
Add the vanilla with the cinnamon and walnuts. Add the flour little by little and knead with your hands until you get a homogeneous dough, cover with plastic wrap and refrigerate for 35 minutes.
With the help of a rolling pin, spread the dough on waxed paper and cut circles. With a smaller circle cut the center.
Place the cookies 2 cm apart on a tray covered with waxed paper.
Bake for 17-22 minutes until they are a little hard. (Chop them with a fork or knife). Let them cool for a few minutes.
To those that are whole, we are going to put the filling of our choice, whether it be jam, cajeta, nutella, etc. (I have made them with melted chocolate in a double boiler), and we are going to cover them with the ones with the hole in the center.

TIPS

We can leave them like this or decorate them with the same filling or with caramel, using a very thin tipped duya (it can be a plastic bag with a very small hole). Also, if we don't like the idea of the filling, we can make them normal and cover them with cinnamon and sugar.
