Do not miss this delicious version of Aztec pie with a crust of plantains, stuffed with ground beef with corn, squash, poblano chili and bathed in the delicious Mole Doña María® with grilled cheese between the layers, simply irresistible.

Ingredients

8 portions
  • 1 tablespoon oil
  • 250 grams ground beef
  • 250 grams ground pork
  • 1/4 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 1/4 cups mashed tomatoes
  • 1/2 cups corn kernels, white
  • 1/2 cups pumpkin, in cubes
  • 1/2 cups poblano pepper, deveined, roasted, skinned and diced
  • 1/2 teaspoons oregano
  • 1/4 teaspoons cumin
  • to taste salt and pepper
  • enough oil, to fry
  • 6 plantain
  • 2 packages Mole Rojo Doña María® ready to serve, (270 gc / u)
  • 1 cup sour cream
  • 2 cups Chihuahua cheese, grated
  • to taste parsley, fried to decorate
  • to taste avocado, in a fan, to decorate
  • to taste baby corn , roasted to decorate
  • to taste cambray onion, in crescents, to decorate

Preparation

Preheat the oven to 180 ° C(356F)
For the filling, in a deep pan cook the meat with the oil over medium heat until it changes color. Add the onion and garlic, the tomato puree and cook for 5 minutes. Add the vegetables, spices and cook about 15 minutes. Season and reserve.
Cut the bananas into slices lengthwise and fry in hot oil until browned and drain on absorbent paper. Reserve.
For the assembly, place banana slices in a refractory oven and fill with a little of the meat, bathe with the red mole Doña María® ready to serve, cream and cheese. Repeat until filling the mold.
Bake about 10 to 15 minutes or until the cheese is melted. Garnish with fried parsley, a fan of avocado, roasted baby corn and onion rings.

PRESENTATION

Serve a slice and decorate with fried parsley, avocado, onion and corn. Stripe with sour cream if you wish.
