Do not miss this delicious version of Aztec pie with a crust of plantains, stuffed with ground beef with corn, squash, poblano chili and bathed in the delicious Mole Doña María® with grilled cheese between the layers, simply irresistible.

Ingredients

8 servings
  • 1 tablespoon of oil
  • 250 grams of ground beef
  • 250 grams of ground pork
  • 1/4 of piece of onion finely chopped
  • 1 clove of garlic finely chopped
  • 1/4 of Cup of tomato puree
  • 1/2 Cup of corn kernels white
  • 1/2 Cup of pumpkin in cubes
  • 1/2 Cup of poblano pepper deveined, roasted, skinned and diced
  • 1/2 teaspoonful of oregano
  • 1/4 of teaspoonful of cumin
  • to taste of salt and pepper
  • enough of oil to fry
  • 6 pieces of plantain
  • 2 packages of Mole Rojo Doña María® ready to serve (270 gc / u)
  • 1 Cup of sour cream
  • 2 cups of Chihuahua cheese grated
  • to taste of parsley fried to decorate
  • to taste of avocado in a fan, to decorate
  • to taste of baby corn roasted to decorate
  • to taste of cambray onion in crescents, to decorate

    Preparation

    Preheat the oven to 180 ° C(356F)
    For the filling, in a deep pan cook the meat with the oil over medium heat until it changes color. Add the onion and garlic, the tomato puree and cook for 5 minutes. Add the vegetables, spices and cook about 15 minutes. Season and reserve.
    Cut the bananas into slices lengthwise and fry in hot oil until browned and drain on absorbent paper. Reserve.
    For the assembly, place banana slices in a refractory oven and fill with a little of the meat, bathe with the red mole Doña María® ready to serve, cream and cheese. Repeat until filling the mold.
    Bake about 10 to 15 minutes or until the cheese is melted. Garnish with fried parsley, a fan of avocado, roasted baby corn and onion rings.

    PRESENTATION

    Serve a slice and decorate with fried parsley, avocado, onion and corn. Stripe with sour cream if you wish.
