Ingredients

4 portions
  • 500 grams bean
  • 800 grams pork rib
  • 1/2 white onions
  • 2 liters water
  • salt, for beans and sauces.
  • 500 grams tomato, for the tomato sauce
  • 2 cloves garlic, for the tomato sauce
  • 12 pieces habanero chile, for the habanero sauce
  • 1 clove garlic, for the habanero sauce
  • 1/2 red onions, for the sauce and to decorate
  • 4 limes, for the habanero sauce
  • 1/2 cups coriander, to decorate
  • 1 avocado, to decorate
  • 3 radishes, to decorate

Preparation

In a pressure cooker over medium high heat add the pork ribs and cook for 30 min. Check very carefully, remove the meat and reserve the broth.
In the same broth add the beans with white onion, cover and cook for 30 more minutes, check carefully.
In a saucepan over medium heat add the beans together with the pork ribs and salt, wait again 30 min, correct the seasoning, remove and reserve.
In a comal or skillet over medium heat, arrange the tomatoes with garlic and leave tatemar, remove until they form a crust.
In a blender glass add the tomatoes, garlic and salt, blend, correct the seasoning and reserve.
In a piece of aluminum foil, arrange the red onion, garlic and habanero pepper, cover them with the same aluminum forming an envelope, seal the edges and put it on the comal, wait 10 to 15 minutes and remove.
Very carefully open the envelope and pour the content on a cutting board, with the help of a fork and knife, chop the content.
In a bowl add the habanero peppers, garlic and chopped red onion, cut the lemons and extract the lemon juice with the help of a juicer, mix the ingredients, season with salt, rectify the seasoning and reserve.
To finish, serve in a deep plate and accompany with red onion, coriander, radish, avocado, tomato sauce tatemado and habanero sauce.

TIPS

You can substitute pork ribs for pork leg.
