Black Bean Quesadillas in Serrano Sauce

If you are a fan of fried quesadillas, here we present a new version: Black Bean Quesadillas in Serrano Sauce. With a little red sauce, stuffed with refried beans with bacon and lots of cheese. Easy, economic and delicious.

  • 4 tomatoes, for the red sauce
  • 2 serrano peppers, for the red sauce
  • 1/2 white onions, for the red sauce
  • 1 clove garlic, for the red sauce
  • 1/4 cups chicken soup, for the red sauce
  • 1 teaspoon oil
  • to taste salt
  • 1/2 cups bacon, finely chopped
  • 3 tablespoons onion, finely chopped
  • 2 cups refried beans, black
  • 1/2 kilos corn dough
  • enough Water, for the dough
  • 1/4 teaspoons salt, for the dough
  • 1 teaspoon baking soda, for the dough
  • 2 cups asadero cheese, in sticks
  • enough oil, to fry
  • to taste lettuce, chopped, to decorate
  • to taste sour cream, to decorate
  • to taste fresh cheese, crumbled, to decorate
  • to taste red onion, in rings, to decorate


For the red sauce, blend the tomato with the serrano pepper, the onion, the garlic and the chicken broth. Fry in a pot over medium heat with the oil and cook for about 30 minutes or until thick. Season with salt to taste.
In a pan over medium heat, cook the bacon until golden brown, add the onion and the refried beans, cook 10 minutes and season.
In a bowl knead the corn dough with water, season with salt and add the baking powder.
Form tortillas with the help of a tortilla press, or between two wooden boards, fill them with beans and grilled cheese, fold in the form of quesadilla and fry for 5 minutes or until golden brown with hot oil. Drain on absorbent paper.
Serve the quesadillas in a deep dish and bathe with the sauce, garnish with lettuce, cream, cheese and purple onion rings.

Keep the dough covered with a plastic bag or cloth to prevent it from drying out.
