Preparation
For the caldillo, blend the tomatoes with the onion, garlic and water.
Heat the oil over medium heat, with the help of a strainer pour the tomato sauce, season with bay leaf, salt and pepper, cook for 10 minutes or until thickening and reserve.
Place the cauliflower in a microwave bowl and cover with non-stick plastic, put in the microwave oven for 10 minutes. Let cool and reserve.
Crush the cauliflower, add the onion, the cheese, the egg, the ground bread, with the help of a spoon, integrate all the ingredients.
With the help of your hands, form the pancakes, pass through flour and reserve.
Beat the whites with a pinch of salt until they are about to nougat.
Add the yolks one by one and beat for 1 minute, without beating too much, just to integrate.
Dip the previously floured pancakes in the egg mixture and fry in hot oil until golden brown. Drain on absorbent paper.
Serve the hot pancakes and dip with the tomato sauce.
