Ingredients

8 portions
  • 100 grams achiote (annatto), for the chamorro
  • 4 allspice, for the chamorro
  • 1 tablespoon oregano, for the chamorro
  • 1 tablespoon cumin, for the chamorro
  • salt, for the chamorro
  • 3 tablespoons white vinegar, for the chamorro
  • 1 cup white vinegar, for the chamorro
  • 2 garlic, asado, for the chamorro
  • 1/4 onions, roasted, for the chamorro
  • 2 pork shanks, for the chamorro
  • 1 bunch coriander, for the tortillas
  • 1 clove garlic, for the tortillas
  • 1/4 onions, for the tortillas
  • 1 cup chicken broth, for the tortillas
  • 2 cups cornmeal, for the tortillas
  • 1 cup water, hot, for the tortillas
  • 1 cup red onion, julienned, for the pickle
  • 1 habanero chile, sliced, for pickling
  • 1 teaspoon oregano, for the pickle
  • 1/4 cups orange juice, for the pickle
  • 2 tablespoons white vinegar, for the pickle
  • salt, for the pickle
  • black pepper, for the pickle

Preparation

For the marinade, blend the achiote, allspice, oregano, cumin, salt, white vinegar, orange juice, garlic and roasted onion.
Place the chamorro in an ovenproof dish and pour the marinade. Refrigerate for 3 hours to marinate.
Cover with aluminum foil and bake 2 hours at 200 ° C.
For the tortillas, blend the cilantro with the garlic, onion and chicken broth. Reservation. In a bowl, pour the previous preparation over the cornmeal, add the hot water and mix until you have a smooth and homogeneous dough.
For the pickled onions, mix the purple onion, the habanero pepper, the oregano, the orange juice, the white vinegar, the salt and the pepper in a bowl and rest for 30 minutes.
Serve the chamorro and accompany with the pickled onions and corn tortillas. Enjoy.

TIPS

You can add avocado leaf or holy leaf to the marinade and cooking of the chamorro to give it more flavor.
