Preparation
In a large pot melt the butter and add the olive oil.
Season the chicken thighs and seal them 1 minute on each side in the pot with butter and olive oil. Remove. Reservation.
In the same pot, fry the bacon until it is semi-golden. Remove. Reservation.
In the same pot, add the onion, garlic and fry 1-2 minutes.
Add the carrot, the mushrooms and leave to fry for two more minutes.
Add the bacon that was previously fried and mixed.
Add the potatoes into slices and form a bed with everything.
On the bed, arrange the chicken thighs and cover them with all the parsley.
Add the wine and the chicken broth.
Season and cook for 1 hour over low heat with the pot covered.
The last 10 minutes uncovers the pot so that the juices are summarized.
