Cottage Cheese Enchiladas with Chile Poblano

Ingredients

4 servings
  • 4 poblano peppers roasted and deveined, in strips
  • 1/4 of onion
  • 1 Cup of low fat sour cream
  • 1/2 Cup of coriander
  • 1 garlic
  • enough of salt and pepper
  • 1 tablespoon of Butter
  • 1 tablespoon of olive oil for the filling
  • 3 spoonfuls of onion finely chopped, for filling
  • 1 tablespoon of garlic finely chopped, for filling
  • 2 Serrano cpeppers finely chopped, for filling
  • 1 tablespoon of epazote finely chopped
  • 400 grams of curd
  • 2 spoonfuls of vegetable oil to fry
  • 12 Corn tortillas blue
  • enough of sour cream to decorate
  • enough of Panela cheese to decorate

Preparation

For the sauce, liquefy the poblano pepper with the onion, the low-fat acidic cream, the cilantro and the garlic.
In a pot heat the butter over medium heat, pour the sauce and let it boil. Cook 10 minutes and season with salt and pepper.
For the filling, in a pan over medium heat heat the oil, sauté the onion, garlic, serrano pepper, season with salt, pepper and epazote, remove, cool and mix in a bowl with the cottage cheese.
Fry tortillas in hot oil just to soften. Drain on absorbent paper and fill with cottage cheese.
Serve the enchiladas with poblano sauce, cream and cheese.
