For those days when you don't want to eat meat, this recipe for vegan mushroom tacos will be ideal for you to prepare a delicious meal. Bathed in a marinade of chili peppers and Puré de Tómate with Chipotle Del Fuerte®, the mushrooms are very tasty and you can use any other kind of mushrooms you want. Serve with fresh cheese, avocado and radish.

Ingredients

4 portions
  • 2 guajillo chilies, desvenados, for the marinade
  • 2 cascabel chili peppers, desvenados, for the marinade
  • 1 cup Water, hot, for the marinade
  • 1/4 white onions, for the marinade
  • 2 cloves garlic, for the marinade
  • 1/4 cups white vinegar, for the marinade
  • 1 teaspoon allspices, for the marinade
  • 1 teaspoon cumin, for the marinade
  • 1/2 cups Tomato Puree with Chilpotle Del Fuerte®, for the marinade
  • 1 tablespoon olive oil
  • 1 cup white onion, filleted
  • 1/2 cups epazote, chopped
  • 4 cups mushroom, filleted
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 8 corn tortillas, lockers
  • enough avocado, cut into wedges
  • enough Common purslane (verdolagas), fresh
  • enough fresh cheese, fallen apart
  • enough radish, sliced

Preparation

In a bowl, soak the peppers with hot water until they are soft; reservation.
Blend the peppers with a little of the liquid in which they were soaked, the onion, garlic, vinegar, pepper, cumin and Tómate Puree with Chipotle Del Fuerte® until you get a smooth marinade.
Heat a skillet over medium heat with the oil and cook the onion until it is bright, add the epazote, the mushrooms and the marinade, cook 5 more minutes, season to your liking with salt and pepper.
Heat the tortillas on a griddle over medium heat.
Serve the mushrooms in marinade over the tortillas, decorate with avocado, quintonil, tomato, fresh cheese and radish.

PRESENTATION

Serve the tacos on a plate with the avocado, the tomato and the cilantro.

TIPS

You can use another kind of mushrooms if you wish.
