Dried Bean Quesadillas with Cheese

If you are a fan of fried quesadillas, I leave you a new version: drowned quesadillas of beans and cheese. With a little red sauce, stuffed with refried beans with bacon and lots of cheese. Easy, economic and delicious.

Ingredients

  • 4 pieces of tomato for the red sauce
  • 2 pieces of chile serrano for the red sauce
  • 1/2 piece of White onion for the red sauce
  • 1 clove of Garlic for the red sauce
  • 1/4 of Cup of chicken soup for the red sauce
  • 1 teaspoonful of oil
  • to taste of Salt
  • 1/2 Cup of bacon finely chopped
  • 3 spoonfuls of onion finely chopped
  • 2 cups of refried beans blacks
  • 1/2 kilo of corn dough
  • enough of Water for the mass
  • 1/4 of teaspoonful of Salt for the mass
  • 1 teaspoonful of baking powder for the mass
  • 2 cups of Asadero cheese in canes
  • enough of oil to fry
  • to taste of lettuce chopped, to decorate
  • to taste of sour cream to decorate
  • to taste of fresh cheese crumbled, to decorate
  • to taste of purple Onion in hoops, to decorate

    Preparation

    For the red sauce, liquefy the tomato with the serrano pepper, the onion, the garlic and the chicken broth. Fry in a pot over medium heat with the oil and cook for about 30 minutes or until thick. Season with salt to your liking.
    In a pan over medium heat, cook the bacon until golden brown, add the onion and the refried beans, cook 10 minutes and season.
    In a bowl knead the corn dough with water, season with salt and add the baking powder.
    Form tortillas with the help of a tortilla press, or between two wooden boards, fill them with beans and grilled cheese, fold in the form of quesadilla and fry for 5 minutes or until golden brown with hot oil. Drain on absorbent paper.
    Serve the quesadillas in a deep dish and bathe with the sauce, garnish with lettuce, cream, cheese and purple onion rings.

    PRESENTATION

    Serve with red sauce, lettuce, cream, cheese and onion rings.

    TIPS

    Keep the dough covered with a plastic bag or cloth to prevent it from drying out.
