Enchiladas de Chile Pasilla Stuffed with Panela Cheese

Picositas enchiladas in pasilla chili sauce with tomato, stuffed with delicious and fresh panela cheese covered in cream, avocado, purple onion and almond. It is a tasty and different option to prepare original enchiladas, try them.

Ingredients

  • 3 teaspoons of oil
  • 3 cloves of Garlic cut in quarters
  • 1/2 piece of onion cut into small pieces
  • 5 pieces of tomato gourd cut in quarters
  • 8 pieces of pasilla roasted, deveined and seedless
  • 2 pieces of black pepper
  • 1 pinch of Salt
  • 1/2 Cup of beef broth
  • 1 Cup of oil
  • 10 pieces of Corn tortillas
  • 2 cups of Panela cheese cut into small cubes
  • 1/2 Cup of almond toast and flieteada
  • 1/2 Cup of sour cream
  • 1/4 of Cup of purple Onion finely filleted
  • 1 piece of avocado cut into segments

    Preparation

    Heat a T-fal pot over medium heat and when the red dot (Thermo-spot) is completely red, add the oil, garlic and onion. Cook until they take a golden color.
    Add the tomato and cook 10 minutes. Add the chile pasilla, pepper and salt, stuffed with the beef broth and wait for it to boil. Remove from heat and reserve.
    Blend the preparation with the T-fal® InfinyForce blender with the "salsa" function.
    Return the sauce to the T-fal pot, and fry with a tablespoon of oil, let it boil and cook for 5 minutes.
    In a T-F skillet heat the rest of the oil and fry the tortillas for a minute, drain on absorbent paper.
    Fill the tortillas with the cheese cubes and roll up.
    Serve taquitos stuffed with panela cheese on a plate and bathe with the sauce.
    Add almonds, cream, purple onion and avocado.

    PRESENTATION

    Serve the enchiladas and decorate with cream a slice of avocado, purple onion, a bit of almond, sliced ​​coriander leaves and serve.

    TIPS

    You can use any other chile to change the flavor of the sauce.
