Enchiladas from Jamaica

Do you love enchiladas in all their versions? Go ahead and try these enchiladas stuffed with jamaica, they are totally different from the conventional, they also have a slightly spicy guajillo chile sauce, cream and cotija cheese, a delicacy for the palate.

Ingredients

  • 2 cups of Jamaica flower
  • 4 pieces of tomato poached for sauce
  • 1/2 piece of onion for the sauce
  • 1 tooth of Garlic for the sauce
  • 2 pieces of guajillo chile hydrated, for the sauce
  • 1 teaspoonful of Salt for the sauce
  • 1 teaspoonful of Pepper for the sauce
  • 1/4 of Cup of chicken soup for the sauce
  • 1/4 of Cup of onion finely chopped
  • 1 tablespoon of Garlic finely chopped
  • 1 teaspoonful of oil
  • 2 pieces of carrot grated
  • 1 tablespoon of sugar
  • 1 teaspoonful of Salt
  • 1/2 teaspoonful of Pepper
  • to taste of oil to fry tortillas
  • 12 pieces of Corn tortillas
  • 1/4 of Cup of sour cream
  • 1/4 of Cup of Cotija cheese
  • 1/4 of Cup of purple cabbage finely chopped

    Preparation

    Cook the jamaica flower in boiling water for 20 minutes, drain and reserve.
    For the sauce, blend the tomato with onion, garlic, guajillo chili, salt, pepper and broth.
    Strain and fry with the oil in a pot over medium heat, let it boil and cook for 20 minutes, rectify seasoning and reserve.
    In a pan cook the onion and garlic with the oil, add the grated carrot and cook for 5 minutes, add the flower of jamaica, sugar, salt and pepper, cover the pan and leave on low heat for 10 minutes.
    In a pan fry the tortillas on both sides with a little oil. Drain on absorbent paper.
    Form the enchiladas by filling the tortillas with the Jamaica. Serve in an extended dish and bathe with the sauce. Garnish with cream, cheese and purple cabbage.

    PRESENTATION

    Serve 3 enchiladas and serve with cream and cheese and purple cabbage.

    TIPS

    Do not throw the cooking water from the Jamaica. Drench it with clean water, add sugar and ice and you will have a rich fresh water.
