Preparation
Soak the cod in water for 72 hours, changing it constantly to remove all the salt.
Remove slices on a kitchen towel to drain.
Fry the garlic and Sierra de Gata olive oil in an earthenware dish, calculating that it covers half the slices of cod. Before browning the garlic, remove the casserole from the fire and the garlic from the oil, allowing it to cool.
When it is cold, pieces of cod are added with the skin upwards and put back on a low heat, taking care that it does not boil and continuing to move the casserole so that the sauce thickens (which is formed when the gelatine is released) ) and do not stick the cod. After a while the casserole is removed from the fire and left to rest. When the oil is tempered it is put back to the fire and so two or three times more until reaching the desired point.
