Ingredients

  • 1 tablespoon oil, to fry
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup tomtato, finely chopped
  • 1/4 cups chipotle chili
  • 2 cups fish fillet
  • 1/2 cups coriander, finely chopped
  • 1/4 cups lemon juice
  • to taste salt
  • to taste black pepper
  • 4 poblano peppers
  • 1 cup manchego cheese
  • enough rice, To accompany

Preparation

In a pan fry the onion, garlic, tomato, chipotle, fish, cilantro, lemon, salt, pepper and cook for 10 minutes.
Roast the peppers in a comal until they turn black. Place them in a bag and sweat them for 20 minutes. Remove from the bag and with the help of a knife, peel them, open them and divert them.
Stuffed with the fish, add the Manchego cheese and bake until au gratin.
Serve and accompany with rice.
