This fluffy and soft cheese souffle is exquisite, with its delicious combination of French cheeses that gives it the perfect creaminess. It is the ideal complement for your dishes, it is light and with an intense flavor.

Ingredients

4 servings
  • 4 spoonfuls of Butter
  • 4 spoonfuls of flour
  • 1 1/2 cups of milk
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • 1 pinch of nutmeg
  • 4 pieces of egg yolk
  • 1/4 of Cup of Emmental cheese grated
  • 1/4 of Cup of Roquefort cheese fallen apart
  • 4 pieces of egg white

    Preparation

    Preheat the oven to 200 ° C.
    In a saucepan over medium heat add butter and flour, continuing to stir, mix until integrated. Add the milk and season with salt, pepper and nutmeg.
    Temperate the yolks with the previous preparation and mix with the help of a balloon whisk. Add the pot and without stopping to move, add emmental cheese and roquefort cheese. Cook 2 minutes and remove from heat. Chill
    In a blender beat the egg whites until they sponge.
    Add the egg whites to the previous mixture and with enveloping movements to incorporate.
    Pour over previously greased individual molds and bake for 7 min.
    Serve immediately.

    PRESENTATION

    On a table accompanied with some slices of baguette or rustic bread.

    TIPS

    The soufflé is a very delicate preparation, which is why it is consumed immediately after leaving the oven.
