Huauzontle cakes with Mole

Cooking with huazontle may seem complicated, but with this recipe of Huauzontle cakes with red mole, you will give a very special touch to your family meal.

The huauzontle provides vitamins A, B1, B2, B3, C and E. It is also a vegetable rich in fiber and that you can prepare in a myriad of ways.

Ingredients

4 portions
  • 2 cups huauzontle, clean and branchless
  • enough Water
  • enough salt
  • 1 cup asadero cheese, grated
  • enough black pepper
  • 1 cup mass, in paste
  • 3 cups chicken soup
  • 1 tablet chocolate table, 90 g (3.7oz)
  • 4 egg whites
  • 4 egg yolks
  • enough flour
  • enough vegetal oil, to fry
  • enough sesame seed, to decorate

Preparation

In a pot with water over medium heat, cook the huauzontles with salt. Drain and reserve.
In a bowl, mix the huauzontles with the cheese, season with salt and pepper. With the help of your hands, form small cakes and set aside.
In a pot over medium heat dissolve the mole in paste with the chicken stock and stir until dissolved. Add the table chocolate and continue stirring until it has a thick consistency. Rectify seasoning.
In a bowl, beat the egg whites with a little salt until you have a stiff peak.
Beat the yolks lightly with a little salt, add the yolks to the whites and beat until incorporated.
Dip the huazontle pancakes in the weathered sauce and fry in a pan with hot oil for 5 minutes or until they are cooked. Place on absorbent paper to remove excess oil.
Serve a little mole on a plate. Place the pancakes, bathe with mole and decorate with sesame.

PRESENTATION

On a plate decorated with sesame and white rice to accompany.

TIPS

The "stiff peaks" refers to beating egg whites without the yolks, at high speed with a balloon whisk until enough air is incorporated, forming very firm peaks.
