Ingredients

6 portions
  • vegetable oil, for the sauce
  • 1/4 onions, for the sauce
  • 2 garlic, for the sauce
  • 6 green tomatoes, in halves, for the sauce
  • 5 morita chiles, for the sauce
  • 1 bunch coriander, for the sauce
  • 2 cups chicken broth, for the sauce
  • vegetable oil
  • 2 cups potato, medium diced
  • coriander
  • beans, To accompany
  • rice, To accompany

Preparation

In a saucepan over medium heat heat the oil, sauté the onion, garlic, tomato, and red pepper until lightly golden, pour in the chicken broth, add the cilantro and cook for 10 minutes. Let it cool.
Blend the previous preparation and reserve.
In a saucepan over medium heat, heat the oil and fry the sausage for 10 minutes or until golden brown, add the potatoes, fry for 5 more minutes, pour in the chicken broth, season with salt and pepper and cook for 10 minutes more.
Serve in a deep plate, decorate with coriander sprouts, accompany with beans and rice.

PRESENTATION

TIPS

Fry the longaniza over low heat so that it has a light crunchy crust and cooks properly.
