Try this recipe to make pastes, a food native to the state of Hidalgo that was introduced by the British to Mexico. This paste consists of a preparation similar to that of an empanada, which can be made of puff pastry and is filled with meat and potatoes. You'll love it!

Ingredients

6 portions
  • 4 cups flour, for the mass
  • 1 cup vegetable shortening, 125 g, for the dough
  • 1 cup butter, 125 g, for the dough
  • 1 teaspoon salt, for the mass
  • enough Water, for the mass
  • enough vegetal oil, for the filling
  • 1 cup onion, for the filling
  • 1/2 cups leek, for the filling
  • 2 tablespoons serrano pepper, for the filling
  • 2 cups potato, for the filling
  • 4 cups ground beef, for the filling
  • 2 tablespoons parsley, for the filling
  • to taste salt
  • to taste black pepper
  • enough egg yolk, to varnish
  • enough chili, in vinegar, to accompany

Preparation

On a table, add the powders and add the lard and butter with the help of a fork, work the dough until you have a point of sand. Rest for 30 minutes.
For the filling, fry the onion, the leek, the chili, add the potatoes, the ground meat cook for 10 minutes, add the parsley, season with salt and pepper. Let cool and reserve
On a surface, spread the dough, cut circles of 10 cm in diameter and fill with the meat.
Place on a tray, varnish with egg and bake for 25 minutes at 180 ° c.
Serve with pickled chili peppers.

PRESENTATION

Serve hot and accompany with lemons and crackers.

TIPS

To make the dough crisp, don't knead the dough too much to avoid generating too much gluten.
