Ingredients

8 portions
  • 6 ancho chili peppers, deveined, clean and soaked, for the marinade
  • 4 guajillo chilies, deveined, clean and soaked, for the marinade
  • 4 cascabel chili peppers, deveined, clean and soaked, for the marinade
  • 1/2 white onions, cut into pieces for the marinade
  • 1 cup white vinegar, for the marinade
  • 5 cloves garlic, cut into pieces for the marinade
  • 1 raja cinnamon, grilled
  • 1/2 tablespoons cumin, roast
  • 1/2 tablespoons black pepper, grilled
  • 2 teaspoons oregano, roast
  • 2 whole cloves, roast
  • 2 kilos beef, with bone and fat cut into pieces
  • 2 cups tomato sauce
  • 1 pinch salt
  • to taste onion, finely chopped, to accompany
  • to taste fresh coriander, finely chopped, to accompany
  • to taste corn tortilla, To accompany

Preparation

Preheat the oven to 200 ° C.
To marinate the marinade, blend all the ingredients until a homogeneous sauce is obtained.
Marinade the beef with the previous mixture for 4 hours in refrigeration.
In an express pot, cook only the meat for 40 minutes or until smooth. Reserve the marinade.
Remove the cooking meat and place it in the container of the marinade you reserved. Mix well and bake 30 minutes or until golden brown. Turn from time to time during cooking, to integrate the juices and achieve a good golden brown.
Remove the meat from the container and reserve. To the same cooking vessel, add the tomato sauce and mix with the remaining juices. Return to the oven for 20 minutes to cook the caldillo.
Serve the meat in a bowl with the broth, accompany with cilantro and onions. Serve with corn tortillas.

PRESENTATION

Serve in a deep dish the meat with caldito, add onion and cilantro.
