Ingredients

8 servings
  • 6 pieces of ancho chili pepper deveined, clean and soaked, for the marinade
  • 4 pieces of guajillo chili pepper deveined, clean and soaked, for the marinade
  • 4 pieces of cascabel chili pepper deveined, clean and soaked, for the marinade
  • 1/2 piece of White onion cut into pieces for the marinade
  • 1 Cup of White vinegar for the marinade
  • 5 cloves of garlic cut into pieces for the marinade
  • 1 raja of cinnamon grilled
  • 1/2 tablespoon of cumin roast
  • 1/2 tablespoon of black pepper grilled
  • 2 teaspoons of oregano roast
  • 2 pieces of whole clove roast
  • 2 kilos of beef with bone and fat cut into pieces
  • 2 cups of tomato sauce
  • 1 pinch of Salt
  • to taste of onion finely chopped, to accompany
  • to taste of coriander finely chopped, to accompany
  • to taste of Corn tortillas To accompany

    Preparation

    Preheat the oven to 200 ° C.
    To marinate the marinade, blend all the ingredients until a homogeneous sauce is obtained.
    Marinade the beef with the previous mixture for 4 hours in refrigeration.
    In an express pot, cook only the meat for 40 minutes or until smooth. Reserve the marinade.
    Remove the cooking meat and place it in the container of the marinade you reserved. Mix well and bake 30 minutes or until golden brown. Turn from time to time during cooking, to integrate the juices and achieve a good golden brown.
    Remove the meat from the container and reserve. To the same cooking vessel, add the tomato sauce and mix with the remaining juices. Return to the oven for 20 minutes to cook the caldillo.
    Serve the meat in a bowl with the broth, accompany with cilantro and onions. Serve with corn tortillas.

    PRESENTATION

    Serve in a deep dish the meat with caldito, add onion and cilantro.
