Delicious roll of cold meats bathed with olive oil dressing, you will love it, prepare it and enjoy its flavor.

Ingredients

10 portions
  • 1 kilo beef tenderloin, open like a sheet
  • 1 kilo pork loin, open like a sheet
  • 4 sausages, (of good quality)
  • 4 strips bacon
  • 4 cups Water
  • 1 cup vinegar
  • 6 leaves bay (laurel)
  • 1 tablespoon chicken bouillon dry
  • 1 tablespoon black pepper
  • 1/2 cups meat juice
  • 1/3 cups apple vinegar
  • 1/4 cups olive oil
  • 1 tablespoon onion, finely chopped
  • 1 bouquet parsley, finely chopped
  • 1 tablespoon English sauce

Preparation

The meats are seasoned a day before and left in the refrigerator with maggi juice and Worcestershire sauce.
The meats are removed from the refrigerator. The blanket is spread and the bacon strips are arranged vertically and the beef tenderloin is spread and the chorizo is crumbled on top.
The pork loin is accommodated on top and rolled tightly.
It is tied and accommodated on a tray.
Add the vinegar, onion, bay leaves, thyme and chicken concentrate to the water.
Preheat the oven and put it for 2 hours covered with aluminum.
Take it out and let it cool, slice it and bathe it with the vinaigrette.
To prepare the vinaigrette, the yolks are dissolved in a little water and they are passed through a strainer, the other ingredients are added, stirring them very well if they want the whites they can be cooked and chopped.

PRESENTATION

Serve in an extended plate and garnish with lettuce leaves, arranging the vinaigrette in a deep plate.

TIPS

Serve with a mashed potato.
