The black roast is a dish of Venezuelan cuisine that has a dark color by the development of red wine-based sauce and a caramelized refined sugar, brown sugar or a derivative of sugar called papelón. The dish has a degree of sweetness without being repugnant to the palate, using a piece of meat located in the hind legs of a beef called Red Boy, which has a good proportion of fat.

Ingredients

7 portions
  • 2.5 kilos beef, Round, clean boy leaving only a small layer of fat.
  • 1 liter Red wine
  • 2 cups onion, cut into pieces
  • 1 cup paprika
  • 1 1/2 cups tomato, ripe, cut into pieces
  • 3 tablespoons English sauce
  • 7 cloves garlic
  • 1/2 teaspoons fresh thyme
  • 1 tablespoon oregano
  • 1 leave bay (laurel)
  • 1/2 teaspoons black pepper
  • 6 tablespoons brown sugar
  • 1/2 cups corn oil
  • 1 tablespoon salt

Preparation

In a deep container place the piece of meat and marina with spices and wine, leave in the refrigerator until the next day. Place the oil in a large pot and heat, in the center of it pour the 6 tablespoons of sugar.
And when it becomes a dark caramel, remove and drain the piece of marinade and carefully place it on the caramel. Lower the heat and with the help of a fork fork or tweezers, go browning all sides of the boy.
It should be dark brown, almost black. As I already told you, it is a slow fire, this is a work of absolute patience because if you burn it over a high heat your sauce will end up bitter at the end and it is not what we want.
Once the roast is cooked on all sides, add the marinade, plus the tomato, paprika and onion, cover and let cook over low heat, stirring occasionally until after about 4 hours the meat is soft
Turn off the fire, and remove the boy from the sauce and then cut it into slices, reserve.
Blend the sauce and then pour it over the meat and let it simmer until the sauce thickens and reduces. It serves.

PRESENTATION

Decorate with a few leaves of cilantro and olives. You can accompany this dish with banana slices, white rice or mashed potatoes.

TIPS

If you want to accelerate this process and put it in a pressure cooker, it is very valid and in two hours you can be ready. I usually drink a good red wine to accompany this dish.
