Ingredients

  • 1 liter of Water
  • 1 teaspoonful of sodium bicarbonate
  • 1 tablespoon of Salt
  • 3 cups of broccoli cut into medium trees
  • 1/2 kilo of beef steak cut into ends
  • 1/4 of Cup of cornstarch
  • 1 tablespoon of paprika
  • 1 tablespoon of Salt
  • 1 tablespoon of Pepper
  • 3 spoonfuls of sesame oil
  • 1 tablespoon of ginger finely chopped
  • 1/4 of Cup of red onion finely chopped
  • 1 tablespoon of Garlic finely chopped
  • 1/2 Cup of soy sauce
  • 1 tablespoon of raw sugar
  • 1 teaspoonful of chili flake

    Preparation

    Heat a pot on high heat with water, salt and baking soda, dip broccoli florets and cook for 5 minutes- Remove and place the broccoli in ice water, drain.
    In a bowl, mix the tips of beef fillet with corn starch, paprika, salt and pepper.
    Heat a pan over medium heat with the sesame oil, cook the ginger, onion and garlic until bright, add the meat and cook until it changes color, add the soy, sugar and chili flakes.
    Incorporate the broccoli and cook 5 more minutes, rectify seasoning and serve.

    PRESENTATION

    Serve with the chili seeds.

    TIPS

    To avoid losing the green color of broccoli, a cooking method called "blanquear" is used, which consists of immersing the vegetables in boiling water with salt for a few minutes and making a temperature shock, submerging them in water with ice.
