Ingredients

  • 4 sweet potato orange, for the puree
  • enough Water, for the puree
  • enough salt, for the puree
  • 1 tablespoon butter, for the puree
  • enough nutmeg, for the puree
  • enough clove, ground, for puree
  • enough black pepper, for the puree
  • 1 tablespoon rosemary, fresh, for the puree
  • 1 egg, for the puree
  • 1 cup whipping cream, for the puree
  • 1200 grams sirloin steak, in pieces, for the meatloaf
  • 6 slices bacon, for the meatloaf
  • 1/4 onions, for the meatloaf
  • 3/4 cups ground bread, for the meatloaf
  • 1 egg, for the meatloaf
  • 2 tablespoons garlic powder, for the meatloaf
  • 3 tablespoons mustard, for the meatloaf
  • 2 tablespoons parsley, finely chopped, for the meatloaf
  • enough rosemary, to decorate

Preparation

Preheat the oven to 180 °C. (350 °F)
In a pot with boiling water and salt, cook the sweet potatoes until they are very soft. Drain, let cool, peel and cut into pieces.
Using your processor Braun® MultiQuick 777, process the sweet potato with the butter, nutmeg, cloves, pepper, rosemary, egg and whipping cream until you obtain a smooth puree. Place in a pastry bag with curly tip and reserve.
For the cake, with your processor Braun® MultiQuick 777, process the sirloin, bacon and onion until you obtain a finely chopped mixture.
Add the bread crumbs, the egg, garlic powder, mustard and parsley and mix very well.
Pour the previous preparation into a previously greased cupcake pan and bake 10 to 12 minutes or until the meat is cooked.
Remove from the oven and pour the sweet potato puree on top of each cupcake. Return to the oven 5 more minutes for the puree to take a little color.
Remove from the oven, remove from mold and decorate with fresh rosemary.

PRESENTATION

Decorate with fresh rosemary.

TIPS

The sirloin comes from the lumbar part of the beef, being a piece with little movement, it is very soft and is considered a thin cut.
