This traditional Mexican food recipe is ideal for using the foods you have bought or prepared during the week and give them a second chance. Prepare this Aztec cake with simple ingredients that you always have at home, such as chicken, tortillas and tomatoes, and you will have a complete meal ready in just 40 minutes.

Ingredients

6 portions
  • enough vegetal oil
  • 12 tortillas, the previous day
  • 3 poblano peppers
  • 6 tomatoes
  • 1 clove garlic
  • 1/2 cups Water
  • to taste salt
  • 1 1/2 cups onion, filleted
  • 1 cup corn grain
  • 4 cups chicken, cooked and shredded
  • to taste salt
  • to taste cream
  • to taste cheese

Preparation

Heat the vegetable oil and pass the tortillas through oil on both sides, without frying. Reservation.
Roast the peppers on both sides and place in a plastic bag to peel them.
For the tomato sauce, blend the tomatoes with the garlic, water and salt for 3 minutes. In a pan, sauté the onion, poblano pepper rajas, corn and chicken; Add the tomato sauce and cook for 10 minutes.
To assemble the cake, place a layer of tortilla, one of chicken, cream and cheese; Repeat the operation until the container is filled, finish with a layer of cheese. Bake for 15 minutes.
Cut a slice and accompany with the drink of your choice.

TIPS

I recommend that you use the tortillas of the previous day and that the cuts to adapt to your mold, so your Aztec cake will be more aesthetic.
