Cauliflower Pancakes in Pasilla Sauce

Enjoy these cauliflower pancakes with cheese accompanied by a stewed pasilla sauce that gives them much more flavor.   • enough Water
  • 4 cups cauliflower
  • to taste salt
  • 2 eggs
  • 2 cups manchego cheese
  • 1/4 cups cornstarch
  • enough vegetal oil
  • 3 tomatoes, for the sauce
  • 5 pasilla chili peppers, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 cup chicken soup, for the sauce
  • 1 tablespoon vegetal oil, for the sauce
  • leaves epazote


In a pot over medium heat cook the cauliflower with salt for 20 minutes, or, until it is very soft. Drain, cut into very small pieces and reserve.
In a bowl mix the cauliflower with the egg, the Manchego cheese and the cornstarch, season with salt and pepper.
In a pan with oil over medium heat, add a ladle of the previous mixture, forming a pancake, cook 3 minutes on both sides, or, until they are golden enough. Reservation.
For the sauce, blend the tomato with the pasilla pepper, the onion, the garlic and the chicken broth.
In a pot over medium heat heat the oil and saute the sauce, add the epazote, season with salt and pepper, cook until it changed color and has a slightly smooth consistency.
Serve the pancakes dipped in the pasilla sauce and decorated with epazote.


On a plate, accompanied by white rice.

Excelente comida muy gourmet, en mi opinión sencilla de hacer & saludable por la coliflor, yo recomiendo hacerlas sin menos aceite yo las hice con muuy poquito y quedaron excelentes!
