The enfrijoladas are a typical Mexican dish. In this recipe we fill them with cheese to make them a little more original and surprise everyone when they break them.

Preparation
Heat a tablespoon of oil in a pan and add the onion and fry until it is sharp. Blend the onion with the garlic, water and beans. Return everything to the same pan and sauté the sauce. Season with salt and pepper.
Heat a little oil and fry the tortillas a few seconds on each side so they heat up. Drain the tortillas on absorbent paper.
Put a pan with a little of the beans and heat.
Dip an omelet in the bean sauce, stuffed with cheese and put them in the pan with little beans until the cheese melts.
Serve with cream, cheese and avocado.
