Chicharrón in Homemade Green Sauce

If you are a fan of Mexican stews, but you lacked the recipe for how to prepare pork rinds in green sauce, this is what you needed. Prepare it for any day of the week, accompanied by a rich homemade rice or some pot beans, or as a traditional stew for the national holidays and enjoy it in delicious taquitos. To have a smooth consistency in your green sauce, cook the tomatoes very well before blending them.

Ingredients

4 portions
  • 2 tablespoons vegetal oil, to fry
  • 10 green tomatoes, cut into quarters
  • 1/2 onions
  • 2 cloves garlic
  • 5 serrano peppers, cut in half
  • 1 bunch fresh coriander
  • 2 cups chicken soup
  • 2 tablespoons vegetal oil
  • to taste salt
  • to taste black pepper
  • 5 cups pork rind
  • enough corn tortilla
  • enough bean, of pot to accompany

Preparation

In a pot over medium heat heat the oil and fry the tomatoes, onion, garlic, serrano peppers and cilantro; pour the chicken stock and cook for 10 minutes, or until cooked.
Blend the tomatoes with the chicken broth.
Heat the oil over medium heat, pour the sauce, season with salt, pepper and cook for 10 minutes.
Add the pork rind and cook 5 more minutes. Serve with tortillas and beans from the pot.

PRESENTATION

In a clay pot, accompanied by pot beans and tortillas.

TIPS

To have a smooth consistency in your green sauce, cook the tomatoes very well before blending them.

Lo preparé y quedo muy rico! Use chicharrón con carnita =) La salsa espesa, pero a nosotros nos gusta así, si lo prefieren menos espeso consideren agreguen otra taza de caldo de pollo en la preparación. Delicioso.
