With this delicious recipe you can prepare a wide chili cured in piloncillo and stuffed with pork rinds in red sauce. We recommend you accompany it with a cured nopales salad and serve it with fresh cheese and cilantro, so that all the flavors combine perfectly. And as a tip, try that the mirror sauce is already well cooked, so that the liquid evaporates and does not rinse.

Ingredients

4 portions
  • 1 cup Water
  • 1/4 cups piloncillo, grated
  • 1/4 cups apple vinegar
  • 4 ancho chili peppers, clean and unveiled
  • 1 cup Tomato Puree with Chilpotle Del Fuerte®
  • 1/2 onions
  • 1 clove garlic, roast
  • 1 serrano pepper, without tail
  • 1 guajillo chili, soaked in hot water
  • enough oil
  • to taste salt
  • to taste black pepper
  • 1 tablespoon oil
  • 4 cups pork rind
  • Salad, of cured nopales
  • fresh cheeses
  • fresh coriander, at your service

Preparation

Heat the water in a pot with the brown sugar, apple cider vinegar and dip the wide chili so that it softens slightly. Reservation.
Place the tomato puree with Chipotle Del Fuerte® in the blender, the onion, garlic, serrano pepper, guajillo pepper with everything and soaking water, and season with salt and pepper. Reservation.
Fry the sauce in a pot with oil for about 15 minutes, season with salt and pepper, reserve a little sauce separately, add the pork rinds and add well. Reservation.
Fill the chiles with the pork rind and serve on a mirror of the sauce you reserved.
Garnish with nopales salad, fresh cheese and cilantro.
