With this delicious recipe you can prepare a wide chili cured in piloncillo and stuffed with pork rinds in red sauce. We recommend you accompany it with a cured nopales salad and serve it with fresh cheese and cilantro, so that all the flavors combine perfectly. Ingredients

4 servings
  • 1 Cup of Water
  • 1/4 of Cup of piloncillo grated
  • 1/4 of Cup of Apple vinager
  • 4 pieces of ancho chili pepper clean and unveiled
  • 1 Cup of Tomato Puree with Chilpotle Del Fuerte®
  • 1/2 onion
  • 1 clove of garlic roast
  • 1 piece of serrano pepper without tail
  • 1 piece of guajillo chili pepper soaked in hot water
  • enough of oil
  • to taste of Salt
  • to taste of black pepper
  • 1 tablespoon of oil
  • 4 cups of pork rind
  • Salad of cured nopales
  • fresh cheeses
  • fresh coriander at your service

    Preparation

    Heat the water in a pot with the brown sugar, apple cider vinegar and dip the wide chili so that it softens slightly. Reservation.
    Place the tomato puree with Chipotle Del Fuerte® in the blender, the onion, garlic, serrano pepper, guajillo pepper with everything and soaking water, and season with salt and pepper. Reservation.
    Fry the sauce in a pot with oil for about 15 minutes, season with salt and pepper, reserve a little sauce separately, add the pork rinds and add well. Reservation.
    Fill the chiles with the pork rind and serve on a mirror of the sauce you reserved.
    Garnish with nopales salad, fresh cheese and cilantro.
