Ingredients

4 portions
  • 1 kilo chilaca
  • 1 tablespoon oil
  • 1/2 onions, filleted
  • 1 tablespoon garlic, finely chopped
  • 1 cup corn, shelled white
  • 1 cup cream
  • 1/2 cups curd cheese
  • 1 tablespoon epazote, finely chopped
  • tortillas

Preparation

Roast the chilacas on a comal until they are black, then place them in a plastic bag and let them sweat for about 15 minutes.
With the help of a knife, remove the skin and open in half, clean, devein and cut into strips.
In a pan with oil, cook the onion, garlic, chilacas, corn, cream, cottage cheese and epazote.
Serve the chilacas with cream in a clay pot and serve with corn tortillas.

PRESENTATION

Serve in a clay pot and accompany with corn tortillas.

TIPS

You can also fry the chilacas, as another technique to remove the skin.
