Chilaquiles Greens with Radish and Cotija Cheese

If you like green chilaquiles, you have to try this recipe; It is a delicious and colorful preparation, where we include a touch of cotija cheese and rich slices of radish, which makes it different from the traditional chilaquiles recipe.

Ingredients

4 portions
  • 3 tablespoons vegetal oil, two for the sauce and one for the beans.
  • 2 jars green sauce, La Morena® (230 gc / u)
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1/2 cups refried black beans
  • 4 cups tortilla chips, of fried corn (500 g)
  • 1 chicken breast, skinless, cooked and shredded (400 g approx.)
  • 1 cup sour cream, at room temperature (200 ml)
  • 1 cup Cotija cheese, (180 g)
  • 2 radishes, washed, disinfected and dry. Cut into thin slices

Preparation

For the sauce, in a medium saucepan heat the oil, add the sauce and let it boil. Cook on low heat for 5 minutes and season. Reservation.
Refry the beans in a small pan with a tablespoon of oil.
In a large container, place a bed of refried beans. Next, place the corn chips and the shredded chicken. Add the hot sauce, the cream. Garnish with cheese, radishes and cilantro. Serve immediately.

PRESENTATION

Serve portions from the base so they have a little frijolitos.

TIPS

To prevent the radish from rusting, keep the slices in water until the moment of use.
