Chile Ancho Bean Stuffed with Cheese

Stuffed chiles are always the sensation, this dish of dry wide chili, stuffed with refried beans with chorizo, gratinated with grilled cheese and served in a mirror of a tomato sauce seasoned with a touch of oregano, is delicious.

Ingredients

  • 1 tablespoon of oil
  • 1/2 piece of White onion cut into pieces
  • 1 tooth of Garlic chopped
  • 5 pieces of tomato cut in quarters
  • 1 pinch of Salt
  • 1 pinch of oregano
  • 1/2 Cup of chicken soup
  • 1 Cup of sausage cut into small cubes
  • 1 tooth of Garlic finely chopped
  • 1/4 of Cup of White onion finely chopped
  • 2 cups of refried beans
  • 1 pinch of Salt
  • 2 cups of Water
  • 2 spoonfuls of piloncillo grated
  • 1 tablespoon of Apple vinager
  • 4 pieces of wide chili Clean without seeds and ready to fill
  • 1 Cup of Asadero cheese grated
  • to taste of avocado to decorate
  • to taste of oregano to decorate

    Preparation

    Preheat oven to 180 ° C or electric oven at medium temperature.
    Heat a pan over medium heat with the oil, fry the onion, garlic, tomato until they are soft, season with salt and oregano, pour the broth and cook until it reaches boiling point. Cool lightly and blend until a smooth sauce is obtained.
    Heat a pan over medium heat, add the sausage and cook until the fat is released, fry the garlic and onion in the same fat, add the beans and cook until all the flavors are incorporated, season with salt to your liking. Reserve the fill.
    Heat a small pot with water, brown sugar and apple cider vinegar until it reaches a boiling point. Remove from heat and soak broad chiles until lightly softened. Remove and reserve.
    Fill the chilies with the beans and cover with cheese, bake until the cheese is grated.
    Serve tomato sauce on the plate and place the gratin chili and decorate with a fan of avocado and oregano.

    PRESENTATION

    TIPS

    The chilies are submerged in the cooking of water with piloncillo to remove itching, in addition they soften so that they can eat more easily.
