Chubby Stuffed Mushrooms in Green Sauce

The gorditas are a very typical preparation in Mexico and are made as thick “tortillas”, usually made from corn, which are filled with some stew. The most common are stuffed with pork rinds, and depending on the region, the ingredients, preparation and presentation vary. On this occasion, we give you the recipe to prepare some chubby without meat, stuffed with mushrooms in green sauce.

Ingredients

4 portions
  • 2 tablespoons vegetal oil, for mushroom stew
  • 1/4 onions, laminated, for mushroom stew
  • 1 clove garlic, finely chopped, for mushroom stew
  • 6 green tomatoes, in quarters, for mushroom stew
  • 1 cup mushroom, laminate, for mushroom stew
  • 1 cup oyster mushroom, laminated, for stew
  • 1/2 cups vegetable broth, for the stew
  • 2 serrano peppers, finely chopped
  • 2 tablespoons chipotle chili, in marinade, ground for stew
  • 1/4 cups fresh coriander, for the stew
  • to taste salt, for the stew
  • to taste black pepper, for the stew
  • 500 grams corn masa
  • 1 tablespoon vegetal oil, for the mass
  • 1 tablespoon baking soda, for the mass
  • enough salt
  • avocados, To accompany
  • enough red onion, finely chopped, to accompany
  • enough fresh coriander, finely chopped, to accompany

Preparation

For the stew, in a pot with hot oil, fry the onion and garlic until they change color. Add the tomato and cook over medium heat for 10 minutes, until it begins to fall apart. Add the mushroom, mushrooms and cook for 5 more minutes. Pour the vegetable stock, the serrano pepper, the chipotle and the cilantro; Season with salt and pepper and cook another 5 minutes. Reservation.
For the dough, in a bowl mix the corn dough with the oil, the baking powder and the salt; Knead until incorporated. With the help of your hands, form a ball of dough and crush it to form a circular chubby. Cook on a hot griddle on both sides over medium heat for 10 minutes. Reserve.
With the help of a knife, make a small opening in the chubby, stuffed with mushroom stew and accompany with avocado, purple onion and cilantro. Ready, enjoy!

TIPS

Make sure your dough is hydrated, but be very careful that it does not pass water or oil, otherwise, it will stick on the griddle.
