Prepare a recipe for cochinita pibil with a different style, but the same classic flavor of this traditional Yucatan dish. These juicy cochinita mixiotes will taste better if they are accompanied by pickled onions, and making them for a meeting or party will be a great decision, as it will be a very surrendering meal and in individual version.

Ingredients

6 portions
  • 1/2 pieces annatto, for the marinade
  • 1 tablespoon oregano, for the marinade
  • 1 teaspoon cumin powder, for the marinade
  • 1 teaspoon cinnamon powder, for the marinade
  • to taste salt, for the marinade
  • to taste black pepper, for the marinade
  • 1 cup orange juice, for the marinade
  • 1/4 cups vinegar, for the marinade
  • 1 kilo top round of pork
  • banana leaf
  • enough young green onion, pickled

Preparation

For the marinade, blend the achiote with oregano, cumin, cinnamon, salt, pepper, orange juice and vinegar. Pour over meat and marina for 2 hours.
In a comal, roast the banana leaves until they soften and change color slightly. Reservation.
Place a sheet of wax paper, a banana leaf, then the pork and wrap.
Place the mixiotes in a steamer and cook for 1 hour.
Serve with pickled onions.

PRESENTATION

In banana leaf, accompanied by pickled onions.

TIPS

An excellent option for your marinades is sour orange, but if you don't have it, you can add a little white vinegar to give it an extra touch of acidity.
