This huauzontles recipe is perfect for any day of the week. To prepare it, you will fill them with cottage cheese, they are weathered and accompanied with a pickled tomato sauce that you will love. Ingredients

4 servings
  • 400 grams of huauzontle
  • 2 liters of Water
  • 2 spoonfuls of Salt
  • 4 egg whites
  • 4 egg yolks
  • 2 spoonfuls of flour
  • 1 Cup of curd
  • enough of oil to fry
  • 6 tomatoes
  • 1/2 onion
  • 1 clove of garlic
  • 3 Serrano cpeppers
  • to taste of Salt
  • to taste of black pepper
  • 1/2 Cup of Fuerte Tomato Puree®
  • 1 teaspoonful of oregano
  • enough of coriander to decorate
  • bean To accompany

Preparation

Remove the stem from the huauzontles and leave only the shoots.
In a pot with water and salt, add the huauzontles and cook until tender. Cuela and reserve.
For the weathering, beat the egg whites to nougat, add the yolks and flour.
On a board and with the help of your hands form pancakes, fill with the cottage cheese, cover with the weathered and fry until golden brown.
For the caldillo, blend the tomatoes, onion, garlic, chili peppers and season with salt and pepper. In a pot, fry the caldillo, add the Tomato Puree® of the Fuerte® and the oregano. Cook for 15 minutes.
Serve the pancakes with the caldillo, decorate with cilantro. Accompany with beans and enjoy.
