Preparation
Remove the stem from the huauzontles and leave only the shoots.
In a pot with water and salt, add the huauzontles and cook until tender. Cuela and reserve.
For the weathering, beat the egg whites to nougat, add the yolks and flour.
On a board and with the help of your hands form pancakes, fill with the cottage cheese, cover with the weathered and fry until golden brown.
For the caldillo, blend the tomatoes, onion, garlic, chili peppers and season with salt and pepper. In a pot, fry the caldillo, add the Tomato Puree® of the Fuerte® and the oregano. Cook for 15 minutes.
Serve the pancakes with the caldillo, decorate with cilantro. Accompany with beans and enjoy.
