You can not miss this typical dish of Mexican cuisine in your recipe book, the green mole is native to Michoacan and it truly is a true delight, very easy to prepare and perfect for any occasion. Accompany it with beans and corn tortillas.

Ingredients

6 portions
  • 1/2 cups pumpkin seed, pumpkin, without shell and without salt
  • 100 grams almond, peeled and toasted
  • 4 poblano peppers, roasted and deveined
  • 1 cuaresmeño or jalapeño pepper, roasted and deveined
  • 500 grams green tomato, roast
  • 1/2 white onions, grilled
  • 1 clove garlic
  • 2 tablespoons oil
  • 2 tablespoons Knorr® Switzerland Chicken Broth
  • 6 chicken breasts, without bone and without skin

Preparation

Blend the seeds with the almonds and a little water to form a homogeneous paste. Reserve.
Blend the peppers (poblano and cuaresmeño) with the tomatoes, onion and garlic, add the best amount of water possible.
Heat the oil and pour the liquefied tomatoes. Cook over medium low heat for 12 minutes or until it turns dull green.
Once the tomatoes are seasoned, pour the ground nuggets and cook over low heat without stopping to move until integrating.
Add Knorr® Switzerland Chicken broth and let it cook over low heat until the oil appears on the surface. Rectify seasoning
Bathe each hot chicken breast with the green mole and serve.

TIPS

Tomatoes can also be used boiled instead of roasted.
