Fish Fillet with Green Pepper

Pipián is a stew made from toasted and ground pumpkin seeds, so it has a very unique flavor. Depending on the region, the pipián can be green, white or red and it is a dish that has been used since pre-Hispanic times, although of course, it has been modified over time. For example, this recipe for fish in pipián, which will be ideal for any day of the week.

Ingredients

4 portions
  • 2 cups pumpkin pip
  • 1/2 cups sesame seed
  • 1/2 cups peanut
  • 1 branch cinnamon
  • 3 allspice berries
  • 1 tablespoon cumin
  • 2 cups purslane
  • 1 cup fresh coriander
  • 8 green tomatoes
  • 3 serrano chiles
  • 1/4 onions
  • 1 clove garlic
  • 2 cups fish soup
  • salt
  • 3 tablespoons vegetable oil
  • 4 Fish fillets
  • salt
  • pepper
  • pumpkin pip, to decorate
  • sesame seed, white to decorate

Preparation

For the pipián: roast the seeds, peanuts, sesame, cinnamon, allspice and cumin (10 minutes). Chill the ingredients and reserve.
In a processor, grind the ingredients that you roasted in parts, first the seeds, then the peanuts, sesame and spices. Reservation.
In a blender, grind the tomato, onion, garlic, chilies, purslane, coriander, and salt.
Heat a pot over medium heat and add the vegetables; later, add the seeds and ground spices, add salt and cook for 20 minutes, until the pipián changes color. Reservation.
Heat a pan over medium heat, add the vegetable oil and grill the fish for 10 minutes, season with salt and pepper.
Serve the fish with the pipián and decorate with pumpkin seeds and sesame seeds.

PRESENTATION

It is accompanied with seeds and sesame.

TIPS

It is important to let the seeds and spices cool after roasting and when grinding them, not doing it for too long so that it does not make a paste.
