Fish Fillet with Green Pipian

The pipián is a stew based on roasted and ground pumpkin seeds, so it has a very unique flavor. Depending on the region, the pipian can be green, white or red and is a dish that has become accustomed since pre-Hispanic times, although of course, it has been modified over time. For example, this recipe for pipian fish, which will be ideal for any day of the week.

Ingredients

4 portions
  • 2 cups Pumpkin pip
  • 1/2 cups sesame seed
  • 1/2 cups peanut
  • 1 branch cinnamon
  • 3 allspices
  • 1 tablespoon cumin
  • 2 cups Common purslane (verdolagas)
  • 1 cup fresh coriander
  • 8 green tomatoes
  • 3 serrano peppers
  • 1/4 onions
  • 1 clove garlic
  • 2 cups fish soup
  • enough salt
  • 3 tablespoons vegetal oil
  • 4 Fish fillets
  • enough salt
  • enough black pepper
  • enough Pumpkin pip, to decorate
  • enough sesame seed, white to decorate

Preparation

For the pipian: roast the seeds, peanuts, sesame, cinnamon, allspice and cumin (10 minutes). Cool the ingredients and reserve.
In a processor, grind the ingredients that you roasted in parts, first the nuggets, then the peanuts, sesame seeds and spices. Reservation.
In a blender, grind the tomato, onion, garlic, chili peppers, verdolagas, cilantro and salt.
Heat a pot over medium heat and add the vegetables; subsequently, add the ground seeds and spices, add salt and cook for 20 minutes, until the pipian changes color. Reservation.
Heat a pan over medium heat, add the vegetable oil and roast the fish for 10 minutes, season with salt and pepper.
Serve the fish with the pipian and decorate with pumpkin seeds and sesame seeds.

PRESENTATION

It is accompanied with seeds and sesame seeds.

TIPS

It is important to let the seeds and spices cool after toasting and grinding them, do not do it for too long so that a paste is not made.
