Here we present a very traditional fish recipe in the state of Guerrero in Mexico. Delicious fish quesadillas cooked with tomatoes and spices. The whiting are fried quesadillas, very tasty. This dish is very versatile, as they can be a rich snack or a strong dish.


4 portions
  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • 500 grams tomtato
  • 4 serrano peppers
  • 1 leave dried bay leaf
  • 1 teaspoon ground cumin
  • 250 grams White fish
  • 10 olives
  • salt, to taste
  • black pepper, to taste
  • 1/2 kilos corn tortilla
  • toothpicks, necessary amount
  • oils, necessary amount


Heat the oil and fry the onion until it is transparent; add the chopped garlic .
Cook the tomatoes for a minute in a pot with hot water.
Cut the tomatoes into small squares.
Add the tomatoes to the onion and garlic preparation. Add the chiles, laurel and cumin.
Cut the fish finely and add it. Add the olives, season with salt and pepper and cook for 5 more minutes. Turn off the preparation and let cool.
Heat the tortillas in a comal.
Add two tablespoons of the fish preparation in the center of the tortillas. Fold the tortilla and close it with chopsticks
Fry the whiting with enough oil, place on absorbent paper to remove excess fat.


Serve in a deep dish accompanied by cream, sliced ​​lettuce and cheese to sprinkle.


Accompany them with green sauce or a rich shrimp cocktail.
