Here we present a very traditional fish recipe in the state of Guerrero in Mexico. Delicious fish quesadillas cooked with tomato and spices. Whiting is fried quesadillas, very tasty. This dish is very versatile, since it can be a delicious snack or a main dish.

Ingredients

4 portions
  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • 500 grams tomtato
  • 4 serrano peppers
  • 1 leave dried bay leaf
  • 1 teaspoon ground cumin
  • 250 grams white fish
  • 10 olives
  • salt, to taste
  • black pepper, to taste
  • 1/2 kilos corn tortilla
  • oils, necessary amount

Preparation

Heat the oil and fry the onion until it is transparent; add the minced garlic.
Cook the tomatoes for a minute in a pot of hot water.
Dice the tomatoes.
Add the tomatoes to the onion and garlic preparation. Add the chilies, bay leaf and cumin.
Cut the fish finely and add it. Add the olives, season with salt and pepper and cook for 5 more minutes. Turn off the preparation and let it cool.
Heat the tortillas on a comal.
Add two tablespoons of the fish mixture to the center of the tortillas. Fold the tortilla and close it with toothpicks
Fry the whiting with enough oil, place them on absorbent paper to remove excess fat.

PRESENTATION

Serve them in a deep plate accompanied by cream, filleted lettuce and cheese to sprinkle.

TIPS

Accompany them with green sauce or a delicious shrimp cocktail.
