Ingredients

8 servings
  • 1 cup of vegetable oil for the filling
  • 1 cup of onion filleted, for the filling
  • 3 cups of mushroom filleted, for the filling
  • 1/4 of cup of epazote for the filling
  • 1 pinch of salt for the filling
  • 1/2 kilo of corn dough masa and hominy made from scratch, for the dough
  • 1/4 of cup of wheat flour for the dough
  • 1 teaspoon of salt for the dough
  • 1 teaspoon of baking soda for the dough
  • 1/4 of teaspoon of lard for the dough
  • enough of chicken soup for the dough
  • 2 cups of Oaxaca cheese shredded, for the filling
  • enough of vegetable oil to fry
  • enough of lettuce chopped, to serve
  • enough of sauce for serving
  • enough of sour cream for serving
  • enough of fresh cheese crumbled, to serve

Preparation

For the filling, heat a pan over medium heat with the oil, sauté the onion with the mushrooms, add the epazote, season with salt and cook until the liquid is reduced. Chill
For the dough, in a bowl mix the nixtamalized corn masa with the wheat flour, the salt, the baking powder and the butter, add the chicken broth little by little, knead until you obtain a consistent dough. Reserve.
On a table, form balls of approximately 30 grams, with a press for tortillas with plastic, flattened and stuffed with mushrooms and cheese, closed like a quesadilla.
In a pot heat the oil until it has the necessary temperature to fry, fry the quesadillas until they are crispy, remove from deep frying and place on an absorbent paper.
Serve the quesadillas with lettuce, cheese, cream and salsa, enjoy.

PRESENTATION

Serve your quesadillas with cream cheese and salsa to your taste.

TIPS

Remember to add the water little by little to the dough so that it does not get over hydrated and it gets ruined, if it were to happen, add a little more wheat flour.
