  • 1 cup vegetal oil, for the filling
  • 1 cup onion, filleted, for the filling
  • 3 cups mushroom, filleted, for the filling
  • 1/4 cups epazote, for the filling
  • 1 pinch salt, for the filling
  • 1/2 kilos corn dough, masa and hominy made from scratch, for the dough
  • 1/4 cups wheat flour, for the dough
  • 1 teaspoon salt, for the dough
  • 1 teaspoon baking soda, for the dough
  • 1/4 teaspoons lard, for the dough
  • enough chicken soup, for the dough
  • 2 cups Oaxaca cheese, shredded, for the filling
  • enough vegetal oil, to fry
  • enough lettuce, chopped, to serve
  • enough sauce, for serving
  • enough sour cream, for serving
  • enough fresh cheese, crumbled, to serve


For the filling, heat a pan over medium heat with the oil, sauté the onion with the mushrooms, add the epazote, season with salt and cook until the liquid is reduced. Chill
For the dough, in a bowl mix the nixtamalized corn masa with the wheat flour, the salt, the baking powder and the butter, add the chicken broth little by little, knead until you obtain a consistent dough. Reserve.
On a table, form balls of approximately 30 grams, with a press for tortillas with plastic, flattened and stuffed with mushrooms and cheese, closed like a quesadilla.
In a pot heat the oil until it has the necessary temperature to fry, fry the quesadillas until they are crispy, remove from deep frying and place on an absorbent paper.
Serve the quesadillas with lettuce, cheese, cream and salsa, enjoy.


Serve your quesadillas with cream cheese and salsa to your taste.


Remember to add the water little by little to the dough so that it does not get over hydrated and it gets ruined, if it were to happen, add a little more wheat flour.
