With this recipe to make huaraches you will give a twist to this delicious appetizer just by adding mole. The combination of the traditional flavors of the huarache with those of the mole and the rib will make this dish a favorite at home and we assure you that you will be even richer than those on the market. Ingredients

4 portions
  • 4 guajillo chilies, soaked, for chili paste
  • 4 morita chili peppers, soaked, for chili paste
  • enough Water, for chili paste
  • 1 cup mass, (pasta)
  • 1 cup tablet chocolate table, for the mole
  • 2 cups chicken soup, for the mole
  • to taste salt, for the mole
  • 1/2 kilos corn dough
  • 1/2 cups lard
  • to taste salt, for the mass
  • 4 ribs
  • to taste salt, for the rib
  • to taste black pepper
  • enough refried beans, for the huarache
  • to taste cream, for the huarache
  • to taste fresh cheese, for the huarache
  • enough fresh coriander, to decorate
  • to taste green sauce, raw, to accompany

Preparation

Grind the chiles soaked with a little water to form a paste. Reservation.
In a pot over medium heat, heat the mole paste, chili paste and chicken broth for 5 minutes until undone; add the sliced chocolate chip, season and cook for 10 more minutes. Reservation.
Prepare the dough with butter and salt, the texture of the dough should be smooth and manageable; mold a ball with your hands and then form the huarache, cook on both sides for 10 minutes, remove and reserve.
Season the rib with salt and pepper; cook with a little oil for 8 minutes.
To assemble the huarache, place a base of refried beans, then the rib and sauté with the mole, add cream and cheese; Accompany with sauce.

PRESENTATION

The huarache is prepared with beans, cream and cheese. It is accompanied with morita sauce and decorated with cilantro.

TIPS

You can prepare the mole and the sauce in advance to save time. The huaraches can be cooked and frozen, so you can use them when you need them.
