Low Enchiladas in Carbohydrates

Do not feel guilty with these delicious low carb enchiladas, they are so delicious that when you eat them you will not miss the tortillas and the best thing is that you are avoiding a lot of unnecessary calories, they will be your favorites.

Ingredients

  • 1 piece of chicken breast
  • 1 tablespoon of Salt (for the chicken)
  • 4 pieces of tomato ball (for the sauce)
  • 1/4 of piece of onion (for the sauce)
  • 1 tooth of Garlic (for the sauce)
  • 3 pieces of Chipotle pepper ) for the sauce)
  • 1 Cup of chicken soup (for the sauce)
  • 2 spoonfuls of oil
  • 2 pinches of Salt
  • 1 pinch of Pepper
  • 8 leaves of Romaine lettuce washed, disinfected and dried
  • 1/2 piece of avocado in cubes
  • 1 Cup of Panela cheese grated (to decorate)

    Preparation

    In a pot, cook the chicken with the salt. Chill and crumble. Reservation.
    For the sauce, blend all the ingredients with the chicken broth for 3 minutes.
    In a pot, heat the oil over medium heat and add the sauce and the rest of the broth. Let it boil and cook over low heat for 10 minutes or until it thickens. Season and incorporate the chicken and cook two more minutes.

    PRESENTATION

    Accompany with cheese and cream.

    TIPS

    You can make them green or red and with different fillings.

    Wow! Aún no la la preparo pero necesitaba una receta de enchiladas y estas se ven deliziosas e lugar de pollito pq no consumo carnita ni pollito ni pescado ni cerdito las pondré verduras gnam gnam gnam. Gracia spor compartir!!1
