Preparation
Heat 1 tablespoon of oil in a pan and fry the potato with the carrot until golden, sprinkle the oregano and set aside.
For the sauce: boil the chiles with the tomato until they soften. Blend the above with onion, garlic, the cube of Knorr Tomato® Tomato Seasoning and 1 1/4 cups of water where the chiles boiled. Strain and cook in a pot over low heat for 5 minutes.
Pass the tortillas through the sauce and fry them for both sides in a hot pan with the remaining oil, fill with the crumbled cheese to form the enchiladas.
Arrange 3 enchiladas per dish, distribute the mixture of sautéed vegetables and decorate with lettuce.
