We present you an appetizer typical of Mexico, are the delicious mining enchiladas, which have a rich red sauce that you will love, in addition, they are stuffed with cooked potatoes, which makes them very tasty. We share our secret ingredient: Knorr Tomato® Tomato Seasoning.

Ingredients

4 servings
  • 1 Cube of Knorr Tomato® Tomato Seasoning
  • 4 spoonfuls of oil
  • 2 pieces of potato cooked and cut into cubes
  • 3 pieces of carrot cooked and cut into cubes
  • 1/2 teaspoonful of oregano
  • 6 pieces of guajillo chili pepper without seeds
  • 2 pieces of tomato In rooms
  • 1/4 of piece of onion white
  • 1 clove of garlic
  • 100 grams of Ranchero cheese fallen apart
  • 1 1/2 cups of Romaine lettuce filleted

    Preparation

    Heat 1 tablespoon of oil in a pan and fry the potato with the carrot until golden, sprinkle the oregano and set aside.
    For the sauce: boil the chiles with the tomato until they soften. Blend the above with onion, garlic, the cube of Knorr Tomato® Tomato Seasoning and 1 1/4 cups of water where the chiles boiled. Strain and cook in a pot over low heat for 5 minutes.
    Pass the tortillas through the sauce and fry them for both sides in a hot pan with the remaining oil, fill with the crumbled cheese to form the enchiladas.
    Arrange 3 enchiladas per dish, distribute the mixture of sautéed vegetables and decorate with lettuce.

    PRESENTATION

    Serve on a white plate.

    TIPS

    Avoid frying tortillas too much so they do not break when refilled.

    A través de Android Esta receta está genial! Muy fácil, deliciosa y creo yo, muy sana. Intenté calentar mis tortillas al comal en lugar de freírlas y la consistencia es bastante agradable. Una excelente opción para descansar de la carne un poquito.
