Mole Rosa with Chicken

This mole is traditional from the state of Guerrero and the pink color is given by beets. This peculiar dish also has versions with Jamaica and with different chilies. With this pink mole recipe, you will learn how to make it from scratch, frying almonds, peanuts, chili peppers and then grinding everything together. Ingredients

8 portions

  • 1 cup pine nut, rose
  • 1 1/2 cups sesame seed

  • 1 plantain, sliced and fried
  • 1 raja cinnamon
  • 1 teaspoon star anise
  • 5 pieces allspice
  • 2 pieces clove
  • 1 cup cranberry
  • 1 beet, boy
  • to taste salt
  • 5 cups chicken soup
  • enough lard
  • 8 pieces chicken, leg and thigh, cooked
  • enough pinon nuts
  • rose petals, to decorate

Preparation

For the seeds, heat a pot over medium temperature, add the butter and start frying the almonds, peanuts, pine nuts and sesame, for a maximum of 5 minutes; it is important that they do not brown too much. Reservation.
Heat a pot again over medium heat with butter and sauté for 7 minutes the onion, garlic, yellow habanero, güero pepper, bread, plantain, cinnamon, anise, allspice, cloves and blueberry , without browning. Reservation.
Place the beets with everything and peel on a tray and bake for 30 minutes, at 200 ° C. Remove the skin and reserve.
Blend the fried seeds, mix with the fried chilies and the baked beets; Add chicken broth and blend for 8 minutes, until the mole is very smooth.
Heat a pot over medium heat and add butter, fry the mole and cook for 30 minutes at low temperature, taking care not to stick.
Serve a mole mirror on a plate, place pieces of hot cooked chicken and bathe with more mole, decorate with pink pine nuts, rose petals and fried plantain; Accompany with tortillas and a drink.

TIPS

Do not brown the ingredients when frying them, as this can affect the color of the mole. When you bake the beets, check them with a knife: the color should be pink, not red. Grind the ingredients very well so that the mole is smooth, if necessary add more liquid. When you cook it, take care of the temperature and stir from time to time so that it does not stick.
