If you love tacos al pastor, try this mini spin on this shepherds dish. It's a soft meat cooked in the oven with crispy strips of bacon in the center and a piece of caramelized pineapple, so good that you will not want to share even a bite!

Ingredients

4 servings
  • 1 kilo of pork loin head steak cut in half
  • 5 pieces of dried guajillo chili pepper deveined and clean, powder (for marinade)
  • 1/2 Cup of annatto paste (for the marinade)
  • 1/4 of Cup of vinegar (for the marinade)
  • 3 spoonfuls of pineapple juice
  • 1 teaspoonful of garlic powder (for the marinade)
  • 1 pinch of fat pepper (for the marinade)
  • 1 pinch of Dried oregano (for the marinade)
  • 3 pinches of Salt (for the marinade)
  • 1 package of smoked bacon (200 g) a little over 7 ounces
  • 1 piece of pineapple peeled and the core removed

    Preparation

    Preheat the oven to 190 ° C (356F).
    Mix all the ingredients for the marinade and add to the meat. Marinate for 20 minutes.
    In a baking tray, place the layers of meat one on top of each other to simulate the spit. Between layers, place 3 to 4 bacon strips according to size. Repeat until all the meat is cooked.
    Insert a thick wooden stick in the center to hold the meat. Set aside.
    Cut a thick cube from the pineapple and insert it on the top of the wooden stick to hold it. The rest of the pineapple is cut into thin slices. Set aside.
    Bake the meat and turn constantly so that the cooking is even. Once cooked, remove and let stand a few minutes.
    Serve and accompany with corn tortillas, sauces and pineapple.

    TIPS

    You can add pieces of cheese between the layers to make the taste richer.

    Rica, la hice con lomo de cerdo pero creo que es mejor con hombro o pierna de cerdo para que no quede un poco seca. Una buena opción para cenar con la familia. Buena receta. Felicidades.
